This is a rarity, for someone is almost always home. Last night, knowing that my hubby and daughters would be leaving early in the morning for a day of fishing, I pre-planned for my own special breakfast, soaking rolled oats in fat-free milk overnight. Feel free to use almond milk or apple juice.

Swiss Muesli is a fruit filled, healthy and nourishing breakfast dish that is good all through the year. It lasts a few days in the refrigerator, making it a simple and quick breakfast.

The house is a bit too quite, and I’m feeling a little lonely but I have some gorgeous flowers to stare at while I enjoy my breakfast.  At this moment, I can’t think of a better dish to start the day!


Healthy Swiss Muesli

Adapted from Healthy Appetite, Gordon Ramsay

Serves 4

2 1/3 cups whole wheat rolled oats

1 ¾ cups fat-free milk

1 granny smith apple, coarsely grated

1 tbsp honey

2/3-cup low-fat vanilla yogurt

1 banana, diced

½ craisins

½ cup sliced almonds

fresh berries

  1. Put the rolled oats in a bowl, fitted with a lid, and pour in the milk. Cover and refrigerate for at least an hour, ideally overnight.
  2. Stir in the grated apple, honey, yogurt, banana, and craisins. Splash in a little more milk to loosen the mixture if it is too thick.
  3. Serve drizzled with a little more honey and topped with fresh berries and almonds.
