Earlier this Sunday morning, I went shopping at the Farmers Market in Pacific Palisades. I start my shopping experience by first stopping by Robek’s for a a large Tropi-Kale Smoothie to go– my favorite! Then I walk across the street, being sure to look at all the cute rescue dogs that are available for adoption, with lots of oohing and ahhing, then onto shopping for my fresh fruits, vegetables, flowers, cheeses, and always picking up some Greek food items, such a whole wheat pita and tzatziki. I love Sunday mornings and wish there were more of them in my week.
Today, I found these glorious red seedless grapes and knew I had to make something with them. I decided on what is now my favorite sandwich of all time…a curried chicken salad skinnywich.
This skinnywich is filling, creamy, and crunchy. The curry is mild, and bites of sweetness come from the honey, apples, and grapes. Not only is this a delicious skinnywich but a healthy one too! This salad refrigerates well and is perfect for a picnic.
Curried Chicken Salad Skinnywich

Serves 6
- 4 boneless skinless chicken breast halves (or 1 store bought rotisserie chicken, skin removed and cut into chunks)
- 1-tablespoon olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- ½ cup light mayonnaise
- ½ cup plain yogurt
- 2 tablespoons fresh lemon juice
- 2 teaspoons curry powder
- 2 teaspoons honey
- 1-teaspoon kosher salt
- ½ teaspoon freshly ground black pepper, to taste
- 1 granny smith apple, cored and diced
- ½ cup red seedless grapes cut in half
- 2 scallions, thinly sliced
For the Chicken (omit if you are using a purchased rotisserie chicken)
Preheat oven to 400 degrees F.
Place the chicken on a baking sheet skin side up, drizzle with olive oil, and season with salt and pepper. Roast until cooked all the way through, about 30 minutes. Cool to the touch. Remove and discard the skin and cut the chicken into chunks.
For the Salad
In a large bowl, combine the mayonnaise, yogurt, lemon juice, curry powder, honey, salt, and pepper. Stir until combined. Add the chicken, apples, grapes, and scallions and mix well.
For the Bread
Heat an indoor grill, spray with cooking spray and grill slices on each side for approximately 3 to 4 minutes, until grill marks are visible.
To Serve
Spoon the chicken salad onto grilled whole grain bread slices or between butter lettuce leafs or even fewer calories.
