Dark Cherry Buttermilk Cake

Ingredients

  • Organic canola oil cooking spray
  • 1 cup all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon non-aluminum baking powder
  • ¼ teaspoon kosher salt
  • ½ cup sugar
  • ¼ cup unsalted butter, room temperature
  • 1 egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk
  • 1 tablespoon raw sugar
  • 2 cups frozen organic dark cherries, do not thaw
  • Powdered sugar for serving

Instructions

  1. Preheat oven to 400° F.
  2. Spray a 9-inch round cake pan with cooking spray.
  3. In large bowl, combine flour, baking soda, baking powder and salt. Set aside.
  4. In medium bowl, beat ½ cup sugar with butter until light and fluffy.
  5. Add egg and vanilla, beat until light and fluffy.
  6. Add wet mixture to dry ingredients.
  7. Add buttermilk slowly, combine until incorporated. Do not over mix.
  8. Pour batter in prepared cake pan and arrange frozen cherries on top of batter.
  9. Sprinkle cherries with raw sugar (you can use regular sugar too) and bake for 20 minutes until cake is golden and a toothpick inserted in the center comes out clean.
  10. Cool for 10 minutes and invert cake onto plate.
  11. Sprinkle with powdered sugar.
