baked jalapeño poppers + tips on hosting a super bowl party

Not only are these baked jalapeño poppers not fried, but they are gluten-free adaptable too.  Getting their crunchiness from panko bread crumbs which are available in gluten-free.  I strongly suggest serving these baked jalapeño poppers with my easy to make creamy ranch dressing too.  You can enjoy your game day food while keeping it health-ish.

For those of you are lucky enough to be hosting a Super Bowl Party this year, here are some of my helpful tips to ease your party planning, so that your event will be a success.

Guest list – Get your guest list together.  Decide if you want co-worker, friends, and or family. A good party includes a variety of people, all who you know will get along. It’s nice to be able to introduce new friends.


Invites – An Evite is always my preferred invite, plus Evite has a great variety of invites for a Super Bowl Party. Get your invites out early – at least 2 weeks prior. Evite helps to keep count of who has responded and how many guests you will have attending your party. Things to consider when sending out an invite: Request if you want your guest to pitch in and bring a dish, dessert or drinks on the invite. You also may want to consider Attire. A great way to get everyone pumped is to suggest that everyone wear the team colors or jersey of the team they want to win. This will create a competitive, but friendly atmosphere for your party.

Menu – When planning a party, I first start with the guest list then immediately start listing what I want to serve. When planning your Super Bowl menu, the more food that can be cooked in advance, the better, so that you are not spending your time in the kitchen. Serve a mix of items to satisfy everyone, and go for both finger foods that are easy to pick up and eat—think sandwiches, pita chips and hummus, wings, and pizza—and heartier fare like chili to balance out all that beer. You will want to add some sweets too, such as a fruit platter with yogurt and brownies. Make sure you have plenty of food; guests will want to replenish often during the game. It’s best to set up a buffet table off to the side where people can load up on main-course items, then have several smaller tables in the TV room with snacks that people can nosh on during the game. Here are some of my favorite Super Bowl recipes:

• Skinny Buffalo Wings + Buttermilk Blue Cheese Dip
• Skinny Jeans Baked Feta Spinach Dip
• Stout Braised Grass-fed Beef Sliders + Ginger Slaw
• Chocolate Zucchini + Banana Bars

My guests appreciate when I consider their special dietary needs or preferences (for example, sugar-free treats for diabetics and meat-free choices for vegetarians).  Plus, I always prefer to include healthy options in my menu.

Plan the food layout – This is when I enjoy my center kitchen island most. I set out the main dishes, buffet style, along with plates, cutlery, napkins, and condiments all out on the island. This way all of my guest can help themselves and return later for more food. Finger food, cheese boards, and appetizers get placed around other tables. utilize coolers, plastic bins, or buckets for beverages, think beer, soda, juice, and water, being sure to cover in ice. Place them in strategic spots so guests won’t be constantly getting up and going to the kitchen for a refill.

Party Space & Seating – A Super Bowl party should always revolve around the big game. Set up the ideal space for your friends and family to enjoy the big game and you’ll be one step closer to executing the perfect party. First, you need to decide where you want everyone to watch the game. You can either have everyone watch one big TV, or set up multiple rooms with TV’s so your guest can spread out and move around. Often it is best to set up one room with a television for serious football fans who don’t want to be distracted by idle chatter. Either way, make sure you have enough comfortable seating for everyone.

Decorations – Super Bowl decorations can be simple to extravagant. Likewise, If you feel compelled to decorate, think team colors, footballs, team jerseys, goal posts, and pennants. But don’t knock yourself out. Most eyes will be more impressed by the clear reception on your television. Try a party supply store and pick up several inexpensive plastic serving platters, trays, and bowls in the color scheme you choose. Just make sure you have enough serving pieces for all the snacks you’ll be setting out.

Ingredients

Scale
  • 1 pound jalapeno peppers (about 20)
  • 8 ounces cream cheese (at room temperature)
  • 2 cups grated sharp cheddar cheese
  • 1/4 cup safflower mayonnaise
  • 2 large eggs
  • 1 tablespoon water
  • 2 cups panko-style bread crumbs (can use gluten-free)
  • 1 teaspoon kosher salt
  • Organic nonstick cooking spray

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper or a silicone baking mat.
  3. Cut stems off of the peppers and cut the peppers in half lengthwise. Scrape out the seeds and veins, and discard.
  4. In a small bowl, add the cream cheese, cheddar cheese, and mayonnaise. Mix to combine. Stuff the peppers with the cheese mixture.
  5. In another small bowl, whisk the eggs with the water. Pour the breadcrumbs onto a plate and mix in the salt. Carefully dip the eat pepper into the egg mixture, letting the excess drain off. Then dip into the bread crumbs and coat well. Place on the prepared baking sheet.
  6. Spray the top of the peppers with the cooking spray and cook for 30 minutes or until golden brown. Serve warm with Creamy Ranch Dressing.

Peppers can be reheated in a 350 degree F. oven for about 10 minutes.
