Ingredients

  • 1 9-inch whole wheat pâte brisée pie crust, fully baked and cooled
  • 6 slices bacon
  • 1 cup shredded Swiss cheese
  • 1/4 cup shredded Parmesan cheese
  • 4 eggs (beaten)
  • 1 cup organic heavy whipping cream
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt and ground white pepper

Instructions

  1. Place strips of bacon on a baking sheet covered with parchment paper and bake at 350-degrees for 18 to 20 minutes until cooked through. Let cook and chop into bite size pieces. Set aside.
  2. Preheat oven to 425 degrees F (220 degrees C).
  3. Sprinkle bacon, and cheeses into pie shell.
  4. In a medium bowl, whisk together eggs, cream, dijon mustard, add salt and pinch of pepper, Pour mixture into pastry shell.
  5. Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C), and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean. Allow quiche to sit 10 minutes before cutting into wedges.
