I’m not vegan, but I do feel good about myself when I eat something vegan. There are several reasons eating vegan “makes me feel good”.
I’m doing my body good by eating a plant-based (rich in protein, iron, calcium and other essential vitamins and minerals) meal or treat.
Environment concerns: The production of meat and other animal products places a heavy burden on the environment.
Due to my attachment to animals, I know that no animal suffered for my meal.
Every time we make the switch from an animal product to a vegan one we are standing up for farmed animals everywhere. I’m not trying to say that you or I need to go vegan, it’s just a good feeling inside and out to eat vegan as often as you can.
My love for animals has resulted in my family owning three dogs, Rocco, Dolce, and Mochi. Are you or someone you know considering adopting a dog? If so, you may be required to apply for the dog of your choice and await an approval process. Here are some thoughts on preparing you for that process and assisting with getting your application approved.
- Are you ready to adopt? A lot of love and companionship comes along with owning a dog, but so does a lot of work and time. I love my three dogs, but they do require a lot of work, requiring the whole family to pitch in.
- Know why you want a dog. Do you crave companionship or want a reason to get outdoors more? Our dogs get walked at least once a day, sometimes twice.
- Dog versus puppy? Puppies take much more time than adult dogs. Puppies require training and need to be housebroken. In addition, there are extra veterinary costs involved in caring for a puppy. If you do not have the time and money to adequately care for a puppy, an adult dog is the best choice. Our puppy, Mochi, is already 1-1/2 years old, but still wakes me up before 7 am every morning, so that he can go outside. The smaller the dog, the smaller their bladder is.
- Prepare for your dog prior to the adoption process – Have outdoor fencing up and escape free. Indoors, you may need dog gates, bed, leash, and chew toys. Know where your dog will be kept when left alone for long periods of time. We live in an area that has coyotes. Not only is our backyard fenced off, but also we had a special pen built as well, to keep coyotes out and dogs safe.
- Have your answers ready. Not only will you be required to complete an application, but you may be faced with a verbal application process as well. Be prepared to answer such questions such as: What are your primary reasons for wanting a dog? About how many hours a day will the dog be left alone? What outside areas are available to the dog? Are you willing to live with hair on the furniture, stains on your rugs, a warm body on your bed, and an animal that might be destructive at times? Pets are an investment of your time and money. Can you afford to provide medical care, grooming, proper diet, shelter and exercise for your new pet? Are you able to make a long-term commitment to care for your pet for its entire life span, which could be as much as 10 to 20 years?

Ingredients
- 1 ¾ cups unbleached all-purpose flour
- 1 ½ cups sugar, sucanat, or coconut palm sugar
- 1 ½ teaspoons baking soda
- ½ teaspoon kosher salt
- 2 teaspoons cinnamon
- 1-teaspoon ground ginger
- 1 ½ cups water
- ½ cup melted coconut oil
- ¼ cup maple syrup
- ¼ cup apple cider vinegar
- 1-teaspoon vanilla
- ½ cup chopped pecans
- powdered sugar (optional)
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, sift dry ingredients (flour, sugar, baking soda, salt, cinnamon, and ginger) together.
- In another mixing bowl, add water and whisk in one at a time, oil, maple syrup, cider vinegar, and vanilla. Add the wet ingredients to the dry and whisk or beat just until blended. Do not over beat!
- Pour into an oiled 9 x 11 inch baking pan and sprinkle the chopped pecan over the top.
- Bake for approximately 40 minutes, or until a knife to toothpick inserted into the cake comes out clean. Allow to cool, remove from pan, and cut into 9 slices. Sprinkle with powdered sugar.
