Description

Honestly, I make a great tasting roasted chicken.  When I follow the 20/20/20 roasting method, my chicken always comes out of the oven perfectly cooked and seasoned.


Ingredients

  • 1 whole organic chicken – room temperature 
  • 2 tablespoon olive oil
  • 3 tablespoons House Blend seasoning or combine a mixture of 1 tablespoon Lawry’s seasoned salt, 1 tablespoon garlic powder, 1 tablespoon paprika, 1/2 teaspoon black pepper.

Instructions

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Place cast-iron skillet in oven to preheat.
  3. Allow chicken to reach room temperature.  Blot chicken with paper towel to dry. 
  4. Rub 1 tablespoon olive oil all over the back of chicken, flip over then add the other 1 tablespoon olive oil to front of chicken, being sure to rub onto legs and wings as well.  Repeat process using the spice mixture.  Be generous with the seasoning by rubbing it all over the front and back of the chicken, even lifting the breast skin and applying some seasoning there too.
  5. If your chicken is looking dry while cooking, spoon some of the pan juice on it or add more olive oil.
  6. Add chicken to preheated cast-iron skillet, or a baking sheet, breast side up. Cook for 20 minutes.
  7. Carefully flip chicken over to breast side down and cook for another 20 minutes.
  8. Flip chicken back over to breast side up and continue to cook for 20 minutes.  Remove from oven and allow to rest for 5 minutes.  Carve chicken and serve.
