One of my favorite dinners to cook is roasted chicken. It’s the perfect comfort food meal and shows your family that they are loved. Honestly, I make a great tasting roasted chicken. When I follow the 20/20/20 roasting method, my chicken always comes out of the oven perfectly cooked and seasoned.
Last Fall, my sister and I took a trip to visit our family in Texas. We stayed in Granbury, like we always do, and shopped at all the cute stores located in the center of town. My favorite store was 1890 Marketplace, which carries their own brand of spices, vinegars, and olive oils. Disneyland for us who love to cook!
Amongst my purchases, was their House Blend seasoning, an all-purpose seasoning mix of spices such as salt, garlic, paprika, tomato, pepper, and cayenne. Their House Blend has quickly become my favorite seasoning! In fact, I continue to order several jars at a time on-line. What is in House blend seasoned roasted 20/20/20 chicken?
This roasted chicken is so easy peasy, all you need are the following ingredients:
- 1 whole organic chicken – room temperature
- 2 tablespoon olive oil
- 3 tablespoons House Blend seasoning or combine a mixture of 1 tablespoon Lawry’s seasoned salt, 1 tablespoon garlic powder, 1 tablespoon paprika, 1/2 teaspoon black pepper.
How easy peasy is it to make House blend seasoned roasted 20/20/20 chicken?
- Start with a preheating a cast-iron skillet in a 450 degree oven.
- Season chicken with olive oil and a generous amount of House Blend seasoning.
- Add chicken to cast-iron skillet breast side up and cook 20 minutes.
- Flip chicken over and cook another 20 minutes.
- Flip chicken back over to breast side up and cook for a final 20 minutes.

Ingredients
- 1 whole organic chicken – room temperature
- 2 tablespoon olive oil
- 3 tablespoons House Blend seasoning or combine a mixture of 1 tablespoon Lawry’s seasoned salt, 1 tablespoon garlic powder, 1 tablespoon paprika, 1/2 teaspoon black pepper.
Instructions
- Preheat oven to 450 degrees Fahrenheit.
- Place cast-iron skillet in oven to preheat.
- Allow chicken to reach room temperature. Blot chicken with paper towel to dry.
- Rub 1 tablespoon olive oil all over the back of chicken, flip over then add the other 1 tablespoon olive oil to front of chicken, being sure to rub onto legs and wings as well. Repeat process using the spice mixture. Be generous with the seasoning by rubbing it all over the front and back of the chicken, even lifting the breast skin and applying some seasoning there too.
- If your chicken is looking dry while cooking, spoon some of the pan juice on it or add more olive oil.
- Add chicken to preheated cast-iron skillet, or a baking sheet, breast side up. Cook for 20 minutes.
- Carefully flip chicken over to breast side down and cook for another 20 minutes.
- Flip chicken back over to breast side up and continue to cook for 20 minutes. Remove from oven and allow to rest for 5 minutes. Carve chicken and serve.
