Description

Sheet Pan Polish Sausage + Vegetables is a delicious keto dinner and so quick and easy to cook.


Ingredients

  • 1 package of  nitrate-free turkey polish sausage, cut diagonal into 1/2 inch thick slices
  • 1 onion, sliced
  • 1 bell pepper, cut into 2-inch pieces
  • 1 pound asparagus, trimmed, cut into 2-inch pieces
  • 1 1/2 cup grape tomatoes, halved
  • 3 tablespoons olive oil or avocado oil
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.  Line a large baking sheet aka sheet pan with parchment paper.
  2. On one side of the sheet pan, arrange the sausage in a single layer.  Roast in the over for 12 to 15 minutes, until it starts to brown on the bottom.
  3. Meanwhile, in a large bowl, toss together the vegetables and set aside.
  4. In a small bowl, add the oil, salt, pepper, Italian seasoning, garlic powder, and paprika and whisk until combined.  Pour this mixture over the vegetables and toss to coat.
  5. When the sausage is done, remove the sheet pan from the oven and flip the sausage pieces oven.  Arrange the vegetables on the other side of the sheet pan.  Place sheet pan back into the oven and roast for 18 to 20 minutes, until the vegetables are tender and the sausage is browned.


Notes

Two small sheet pans can be used instead of one large sheet pan.

Any type of polish or kielbasa sausage can be used
