My hubby loves hot dogs and has been craving one of those bacon wrapped hot dogs, cooked in onions and peppers, sold late night from vendor carts off the streets of Los Angeles. Since we no longer attend Laker Games, where almost every corner has a cart wafting of hot dogs and peppers, I wanted to satisfy his craving by making sheet pan polish sausage + vegetables for dinner. A much healthier and keto version of the vending cart hot dogs.
In this sheet pan polish sausage + vegetables dinner, I used a nitrate free turkey polish sausage. Feel free to use whatever type of polish or kielbasa sausage of your liking. My hubby even suggested using Italian sausage next time.
While the sheet pan polish sausage + vegetables were cooking in the oven, a delicious aroma of sausage, onions, and bell peppers permeated throughout the kitchen. Just like the hot dog carts on the LA street corners. This dinner definitely satisfied my husband’s craving for those hot dogs. For me, not only was it great tasting, but sheet pan polish sausage + vegetables dinner was so quick and easy to cook, plus clean-up was a breeze.

What is in sheet pan polish sausage + vegetables?
- 1 package of nitrate-free turkey polish sausage
- 1 onion
- 1 bell pepper
- 1 pound asparagus
- 1 1/2 cup grape tomatoes
- olive oil or avocado oil
- kosher salt
- black pepper
- Italian seasoning
- paprika
- garlic powder
How easy is it to cook sheet pan polish sausage + vegetables?
- Preheat oven to 400 degrees Fahrenheit. Line a large baking sheet aka sheet pan with parchment paper.
- On one side of the sheet pan, arrange the sausage in a single layer. Roast in the over for 12 to 15 minutes, until it starts to brown on the bottom.
- Meanwhile, in a large bowl, toss together the vegetables and set aside.
- In a small bowl, add the oil, salt, pepper, Italian seasoning, garlic powder, and paprika and whisk until combined. Pour this mixture over the vegetables and toss to coat.
- When the sausage is done, remove the sheet pan from the oven and flip the sausage pieces oven. Arrange the vegetables on the other side of the sheet pan. Place sheet pan back into the oven and roast for 18 to 20 minutes, until the vegetables are tender and the sausage is browned.

This is a great meal to make at night, refrigerate and heat up for lunch the next day.

- 1 package of nitrate-free turkey polish sausage, cut diagonal into 1/2 inch thick slices
- 1 onion, sliced
- 1 bell pepper, cut into 2-inch pieces
- 1 pound asparagus, trimmed, cut into 2-inch pieces
- 1 1/2 cup grape tomatoes, halved
- 3 tablespoons olive oil or avocado oil
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
Instructions

Notes
Two small sheet pans can be used instead of one large sheet pan.
Any type of polish or kielbasa sausage can be used
