Soon after the holidays, we decided to convert our game room into a TV theater room, since the pool table gets very little, if any, use these days. Originally, I was pushing for placing a long farmhouse table in that room, so we could have lots of dinner parties, serving family-style meals. But with a vote of 1 out 4, I lost. Therefore, our game room will soon be another man cave…I mean TV theater room, where we can all sit in comfy reclining chairs and watch movies on our large flat screen TV.
Hopefully, our TV theater room will be completed in time for Superbowl. If it is, for sure we will be inviting friends over and for sure I will be making these spicy and delicious sriracha chicken wings + creamy ranch dressing. These sriracha chicken wings + creamy ranch dressing makes a refreshing updated change from buffalo wings with blue cheese dressing. Not only are sriracha chicken wings gluten-free, but they are baked not fried like the classic buffalo wings.
This recipe makes approximately 36 wings and takes very little time to make. The sriracha chicken wings do require marinating, but for only 30 minutes or in the refrigerator overnight (up to 12 hours). Next, you simply broil the marinated chicken wings and toss in a simple, easy to make sriracha sauce. For looks and a little bit more taste, I sprinkle chopped cilantro over my sriracha wings before serving. Seriously, there is so much flavor in these tiny spicy wings and the creamy ranch dressings adds a cooling flavor to your tongue.

I sure hope our TV theater room gets completed in time for Superbowl, because I can’t wait to make these sriracha chicken wings + creamy ranch dressing again. Now that I think about it, our guest room hasn’t been used in ages either. Maybe I should push my hubby for converting the guest room into a huge walk-in closet. I’ll wait to bring that discussion up once our TV theater room has been finished.

Ingredients
- 1/2 cup safflower mayonnaise or vegan mayonnaise
- 1/4 cup buttermilk or dairy-free alternative
- 2 tablespoons fresh chives, chopped
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a mixing bowl, add the mayonnaise, buttermilk, chives, onion and garlic powder, salt and pepper. Mix to combine. Cover and refrigerate until serving time. (Can be made up to 2 days ahead).

sriracha chicken wings

Ingredients
- 3 pounds organic chicken wing drummers
- 1/2 cup extra-virgin olive oil
- Juice of 2 lemons (about 1/4 cup lemon juice)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon freshly ground black pepper
- 1/2 cup unsalted butter or dairy-free butter
- 3 or 4 tablespoons Sriracha sauce
- 1/4 cup chopped cilantro (optional)
Instructions
- In a bowl, add the olive oil, lemon juice, onion powder, garlic powder, salt, and pepper. whisk to combine. Add the chicken and mix to coat the wings. let sit at room temperature for 30 minutes or in the refrigerator (covered) overnight (up to 12 hours).
- Preheat broiler.
- Line a baking sheet with foil. Remove the wings from the marinade, shaking of any excess. Place the wings on the prepared baking sheet and discard the remaining marinade. Broil wing for 10 minutes, flip the wings over, then broil for another 10-12 minutes. Note: Every broiler varies in temperature. It’s imperative that you closely watch the wings cook, as they can quickly burn. If you find that the wings aren’t cooking, try carefully raising the oven rack a bit closer to the top of the oven.
- Remove the wings from the baking sheet and place in a large bowl.
- In a small saucepan, melt the butter over medium heat. Whisk in the smirch sauce. Continue to whisk and cook until the mixture is fully combined and has thickened. Pour the sauce over the wings and toss to coat. Put the wings on a serving plater , sprinkle with cilantro and serve with Creamy Ranch Dressing.
