Mexican Lasagna with cilantro lime creme is a casserole filled with layers of flour tortillas, a delicious combination of ground beef, black beans, corn and salsa, topped with ricotta cheese, and covered with melted cheese. Do top with a dollop of cool cilantro lime creme when serving as a zesty compliment. Basically, this is a hearty burrito casserole!
Seriously, this has to be one of the easiest and most satisfying dinners ever. The first time I made this Mexican Lasagna with cilantro lime creme was during quarantine. Our daughter’s boyfriend, who loves Mexican food, was staying with us. I was cooking my shrimp tacos for dinner, but he doesn’t eat seafood, so I put together this Mexican Lasagna, plus whipped up a quick sour cream sauce of cilantro, lime, and garlic, as a back-up for him. To my surprise, the whole family, who aren’t lovers of the traditional Italian lasagna, enjoyed this Mexican lasagna with cilantro lime creme.
So far, I have made this Mexican Lasagna three more times since and even taken it over to my daughters for lunch the next day. Needless to say, her husband devoured it. Even my 1-1/2 year old granddaughter loved it! Oh yeah, it’s great cold too! Mexican lasagna is an amazing left-over dish.

- My husband follows the keto diet, so I’ve made this Mexican Lasagna with casava tortillas for him and it turned out great!
- I also tried using ground turkey, instead of ground beef, and it was just as delicious.
- Use organic meat, vegetables, and salsa when possible.
What is in a Mexican lasagna?
- Ground beef or turkey
- Jar chunky salsa, mild or hot
- Black beans
- Corn, frozen or canned (drained)
- Flour tortillas, can use a low carb such as Casava
- Ricotta cheese
- Mexican cheese blend, or a cheddar and jack blend
How easy is it to make Mexican lasagna?
Start by cooking ground beef mixture: In a skillet, cook ground meat until browned. Drain fat and add salt, garlic powder, and salsa. Mix thoroughly with a wooden spoon. Add a can of black beans (do not drain) and corn to the meat mixture. Cook meat mixture over low heat for approximately 10 minutes, stirring occasionally.
Fill casserole dish: Using a baking dish, layer a couple of tortillas on bottom, then top with half the meat mixture. Add half the ricotta cheese in dollops over the meat mixture. Carefully spread out the ricotta cheese. Place another 2 tortillas on top. Repeat the layer with meat mixture, ricotta cheese, and another 2 tortillas and cover with Mexican cheese mix.
Bake: Bake in oven at 350 degree over for 25 – 30 minutes. It’s that easy!

Cilantro lime creme is such an easy sauce to make with very few ingredients, so don’t feel overwhelmed. Try making it before you start the Mexican lasagna and refrigerate, or make it while the Mexican lasagna cooks. In a few short minutes, you will be rewarded with a zesty lime and cilantro sauce that will nicely complement the Mexican lasagna.
- 8 oz sour cream

1 pound ground beef
1 tsp salt
1 tsp garlic powder
1 16 oz jar chunky salsa
1 can black beans
14 oz frozen corn or 1 can (drained) corn
flour tortillas
15 oz (1–1/2 cups) whole milk ricotta cheese
12 oz bad of Mexican mix cheese or cheddar and Monterey jack blend
sliced avocado and chopped cilantro for serving (opptional)
Instructions
Preheat over to 350 degrees.
In a large frying pan, cook ground beef until browned. Drain fat and add salt, garlic powder, and salsa. Mix thoroughly with a wooden spoon. Add a can of black beans (do not drain) and corn (drained if canned) to the meat mixture.
